Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tablespoon (15ml) pure vanilla extract
- 2 3/4 cups (340g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) salt
Instructions:
- Cream together the softened butter and granulated sugar on medium-high speed until the mixture is pale and fluffy (about 3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract until the batter looks glossy.
- In a separate bowl, whisk the flour, baking soda, and salt.
- Turn the mixer to the lowest setting and gradually add the flour mixture. Use a spatula to fold in the remaining dough until no white streaks remain.
- Scoop rounded tablespoons of dough (about 2 tbsp per cookie) and place them 2 inches apart on lined baking sheets.
- Bake at 350°F (175°C) for 9-11 minutes. Remove when the edges are barely golden but the centers still look slightly underbaked.
- Allow cookies to firm up on the hot pan before transferring to a wire cooling rack.
