Description

This Hobo Casserole Ground Beef is a comforting, hearty meal that’s perfect for busy weeknights or a family dinner. Made with ground beef, potatoes, and vegetables, it’s an all-in-one dish that’s both easy and filling. The best part? It’s baked together to create a deliciously savory flavor with minimal prep time!

Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and sliced thinly
  • 1 onion, chopped
  • 1 cup frozen peas or mixed vegetables
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the ground beef: In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat and set the beef aside.
  3. Prepare the vegetables: In the same skillet, sauté the chopped onions for 2-3 minutes until softened. Add the frozen peas (or mixed vegetables) and cook for another 2 minutes. Season with salt, pepper, garlic powder, and paprika.
  4. Assemble the casserole: Layer the sliced potatoes at the bottom of the greased baking dish. Spread the cooked ground beef and vegetable mixture over the potatoes. Then, pour the cream of mushroom soup and milk over the top, spreading evenly to cover everything.
  5. Add cheese: Sprinkle shredded cheddar cheese on top of the casserole.
  6. Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  7. Serve: Let the casserole rest for 5 minutes before serving. Enjoy the hearty, comforting meal with a side of your favorite bread or salad.

Notes

Vegetable Variations: Feel free to add or swap out vegetables according to your preferences, such as carrots, corn, or green beans. Fresh vegetables can also be used, but you may need to cook them for a few extra minutes before assembling the casserole.

Cheese Options: You can try different types of cheese like mozzarella or Monterey Jack for a creamier texture or more flavor.

Make Ahead: This dish can be assembled ahead of time and stored in the fridge until ready to bake. Just make sure to add a few extra minutes to the baking time if it’s cold from the fridge.
