Ingredients:

  • 3 tbsp unsalted butter, melted and slightly cooled
  • 1/4 cup packed brown sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/8 tsp sea salt
  • 1/3 cup semi-sweet chocolate chips
  • Flaked sea salt for garnish

Instructions:

  1. Preheat oven to 350°F (175°C). In a medium bowl, whisk together the melted butter and brown sugar until smooth.
  2. Stir in the egg yolk and vanilla extract, whisking vigorously until the mixture looks glossy and unified.
  3. Sift in the flour, cocoa powder, and baking soda, then add the sea salt.
  4. Using a spatula, fold the ingredients together just until no streaks of flour remain. Do not over-mix.
  5. Gently fold in the semi-sweet chocolate chips.
  6. Scoop about 2 tablespoons of dough per cookie and place them on a parchment-lined baking sheet.
  7. Bake for 8–10 minutes until the edges are set and slightly firm, but the centers still look slightly soft.
  8. Remove from oven and immediately sprinkle with flaked sea salt if desired.
