Ingredients:
- 3 tbsp unsalted butter, melted and slightly cooled
- 1/4 cup packed brown sugar
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1/4 tsp baking soda
- 1/8 tsp sea salt
- 1/3 cup semi-sweet chocolate chips
- Flaked sea salt for garnish
Instructions:
- Preheat oven to 350°F (175°C). In a medium bowl, whisk together the melted butter and brown sugar until smooth.
- Stir in the egg yolk and vanilla extract, whisking vigorously until the mixture looks glossy and unified.
- Sift in the flour, cocoa powder, and baking soda, then add the sea salt.
- Using a spatula, fold the ingredients together just until no streaks of flour remain. Do not over-mix.
- Gently fold in the semi-sweet chocolate chips.
- Scoop about 2 tablespoons of dough per cookie and place them on a parchment-lined baking sheet.
- Bake for 8–10 minutes until the edges are set and slightly firm, but the centers still look slightly soft.
- Remove from oven and immediately sprinkle with flaked sea salt if desired.
