Ingredients:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Whisk the melted butter and brown sugar together in a mixing bowl until the mixture looks like wet sand and no large sugar clumps remain.
  2. Stir in the egg yolk and vanilla extract until the batter becomes glossy and smooth.
  3. Sift in the flour, baking soda, and salt.
  4. Using a spatula, fold the dry ingredients into the wet base until no streaks of white flour remain; do not over-mix.
  5. Fold in the semi-sweet chocolate chips.
  6. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  7. Bake at 350°F (175°C) for 10-12 minutes until the edges are set and a deep amber color, but the centers still look slightly underbaked.
  8. Let the cookies cool on the pan for 5 minutes to allow the centers to set.
