Ingredients:
- 1 lb (450g) dried black beans, rinsed and picked over
- 1 medium (150g) yellow onion, finely diced
- 4 cloves (12g) garlic, minced
- 6 cups (1.4L) low-sodium chicken or vegetable broth
- 1 bay leaf
- 1 ham hock (approx. 8 oz / 225g)
- 2 tbsp (16g) chili powder
- 1 tbsp (6g) ground cumin
- 1 tsp (2g) smoked paprika
- 2 tsp (10g) chipotle pepper in adobo, minced
- 1 tsp (5g) salt
- ½ tsp (3g) black pepper
- 2 tbsp (30ml) fresh lime juice
- ¼ cup (15g) fresh cilantro, chopped
- 1 tsp (5g) honey
Instructions:
- Thoroughly rinse the dried black beans in a fine-mesh strainer and remove any small stones or shriveled beans.
- Add the beans, diced onion, minced garlic, broth, bay leaf, chili powder, cumin, paprika, chipotle, and black pepper to the slow cooker.
- Submerge the ham hock in the mixture and stir gently to combine.
- Cover and cook on Low for 7–8 hours or High for 4 hours until the beans are tender enough to be smashed easily against the side of the pot.
- Remove the ham hock, shred the meat, and return the meat to the pot.
- Use an immersion blender to blend a portion of the soup directly in the pot until the desired creamy consistency is reached.
- Stir in the fresh lime juice, honey, and chopped cilantro to finish.
