Ingredients:

  • 2 large overripe bananas (approx. 225g)
  • 2 large eggs (100g)
  • 1/2 cup (65g) oat flour
  • 1 tsp (2g) baking powder
  • 1/2 tsp (1g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1 tbsp (14g) melted unsalted butter

Instructions:

  1. Place the peeled bananas in a medium mixing bowl and mash with a fork until smooth with only a few small lumps remaining.
  2. Whisk in the eggs until fully incorporated, then stir in the oat flour, baking powder, cinnamon, and salt. Mix until just combined; do not overmix.
  3. Heat a non-stick skillet or griddle over medium-low heat with a small amount of melted butter.
  4. Pour 2 tablespoons of batter per pancake. Cook for 2-3 minutes until small bubbles form on the surface and edges look set.
  5. Flip the pancakes and cook for another 2 minutes until both sides are golden-brown.
