Ingredients:
- 2 large overripe bananas (approx. 225g)
- 2 large eggs (100g)
- 1/2 cup (65g) oat flour
- 1 tsp (2g) baking powder
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 tbsp (14g) melted unsalted butter
Instructions:
- Place the peeled bananas in a medium mixing bowl and mash with a fork until smooth with only a few small lumps remaining.
- Whisk in the eggs until fully incorporated, then stir in the oat flour, baking powder, cinnamon, and salt. Mix until just combined; do not overmix.
- Heat a non-stick skillet or griddle over medium-low heat with a small amount of melted butter.
- Pour 2 tablespoons of batter per pancake. Cook for 2-3 minutes until small bubbles form on the surface and edges look set.
- Flip the pancakes and cook for another 2 minutes until both sides are golden-brown.
