Ingredients:
- 2 cups (450g) sweet potatoes, small diced
- 1 cup (150g) red bell pepper, diced
- 1 cup (150g) red onion, diced
- 2 tbsp (30ml) olive oil
- 1 tsp (6g) smoked paprika
- ½ tsp (3g) garlic powder
- ½ tsp (3g) sea salt
- ¼ tsp (1g) black pepper
- 1 lb (450g) lean turkey sausage, crumbled
- 1 tbsp (15ml) avocado oil
- 10 large eggs
- ¼ cup (60ml) unsweetened almond milk
- ½ tsp (3g) sea salt
- ¼ tsp (1g) black pepper
- 1 cup (115g) shredded sharp cheddar cheese
- 3 scallions, thinly sliced
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss diced sweet potatoes, bell peppers, and onions with olive oil, smoked paprika, garlic powder, salt, and pepper.
- Spread vegetables in a single layer on the baking sheet and roast for 20-25 minutes until golden-brown and slightly charred.
- Heat avocado oil in a skillet over medium-high heat and cook crumbled turkey sausage until fully cooked through; remove from pan and set aside.
- Whisk eggs, almond milk, salt, and pepper in a bowl until fully combined.
- Reduce skillet heat to medium-low, pour in the egg mixture, and gently fold with a spatula until soft-set (slightly wet) to prevent overcooking during reheating.
- Divide roasted vegetables equally among 6 airtight containers.
- Top each container with equal portions of cooked sausage and scrambled eggs.
- Sprinkle each bowl with shredded cheddar cheese and sliced scallions.
