Ingredients:
- 1 cup (115g) sweet potato, diced into ½ inch cubes
- 1 tbsp (15ml) extra virgin olive oil
- ½ tsp (3g) smoked paprika
- ¼ tsp (1.5g) sea salt
- 2 large (100g) eggs
- 2 oz (56g) ground turkey sausage
- 2 cups (30g) fresh baby spinach
- 2 tbsp (30g) crumbled feta cheese
- ¼ medium (40g) avocado, sliced
- 1 tsp (5ml) sriracha
Instructions:
- Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes in a bowl with olive oil, smoked paprika, and salt until evenly coated. Spread them on a baking sheet and roast for 15-20 minutes until the edges are charred and the centers are tender.
- While the potatoes roast, heat a non-stick skillet over medium heat. Add the ground turkey sausage, breaking it apart with a spatula. Cook until browned and no longer pink. Throw in the baby spinach and sauté for 60 seconds just until the leaves wilt.
- Push the sausage and spinach to the side of the pan. Crack the eggs directly into the center. Cover the pan with a lid for 2-3 minutes until the whites are set but the yolks remain liquid.
- Transfer the roasted sweet potatoes to a bowl. Top with the sausage-spinach mixture and slide the eggs on top. Garnish with crumbled feta, sliced avocado, and a drizzle of sriracha.
