Ingredients:
- 1 lb cooked chicken breast, finely shredded
- 1 cup low-fat cottage cheese
- 1/2 cup plain non-fat Greek yogurt
- 1/2 cup Buffalo hot sauce
- 1/2 tsp garlic powder
- 1/4 cup shredded part-skim mozzarella cheese
- 1 tbsp lemon juice
- 2 stalks celery, sliced
- 1 tbsp chopped green onions
- 1 tbsp blue cheese crumbles
Instructions:
- Place the cottage cheese, Greek yogurt, buffalo sauce, and garlic powder into a food processor. Blend on high until the mixture is completely smooth and no cottage cheese curds remain.
- Transfer the blended sauce to a mixing bowl. Fold in the shredded chicken breast and lemon juice, stirring until the chicken is thoroughly coated.
- Transfer the mixture to a skillet over medium heat or a microwave-safe bowl. Heat for 3-5 minutes, stirring constantly until steaming.
- Fold in the mozzarella cheese at the end, stirring until melted and stretchy. Garnish with sliced celery, chopped green onions, and blue cheese crumbles before serving.
