Ingredients:

  • 1 lb cooked chicken breast, finely shredded
  • 1 cup low-fat cottage cheese
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup Buffalo hot sauce
  • 1/2 tsp garlic powder
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 tbsp lemon juice
  • 2 stalks celery, sliced
  • 1 tbsp chopped green onions
  • 1 tbsp blue cheese crumbles

Instructions:

  1. Place the cottage cheese, Greek yogurt, buffalo sauce, and garlic powder into a food processor. Blend on high until the mixture is completely smooth and no cottage cheese curds remain.
  2. Transfer the blended sauce to a mixing bowl. Fold in the shredded chicken breast and lemon juice, stirring until the chicken is thoroughly coated.
  3. Transfer the mixture to a skillet over medium heat or a microwave-safe bowl. Heat for 3-5 minutes, stirring constantly until steaming.
  4. Fold in the mozzarella cheese at the end, stirring until melted and stretchy. Garnish with sliced celery, chopped green onions, and blue cheese crumbles before serving.
