Ingredients:

  • 2 cups (60g) fresh baby spinach
  • 1/2 cup (15g) chopped kale, stems removed
  • 1 medium (150g) Granny Smith green apple, cored and chopped
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) fresh ginger, peeled and grated
  • 1 cup (240ml) unsweetened coconut water
  • 1 tbsp (12g) chia seeds
  • 1 pinch (1g) sea salt

Instructions:

  1. Wash all produce thoroughly. Core the green apple and chop it into small chunks. Note: Leave the skin on for the nutrients.
  2. Grate the ginger finely using a microplane or small grater. Note: This prevents chunky bits in the final drink.
  3. Pour the coconut water into the blender first. Note: This protects the blades and helps the flow.
  4. Add the chia seeds to the liquid. Note: This lets them start hydrating immediately.
  5. Stuff in the baby spinach and chopped kale. Note: Pack them down so they don't get stuck at the top.
  6. Toss in the chopped apple, grated ginger, and lemon juice.
  7. Start the blender on the lowest setting to break up the apple chunks. Note: This prevents the motor from straining.
  8. Quickly increase to high speed.
  9. Blend for 45–60 seconds until the color is a uniform green and the texture is velvety.
  10. Stir in the pinch of sea salt by hand or pulse for 2 seconds.
