Ingredients:
- 2 cups (60g) fresh baby spinach
- 1/2 cup (15g) chopped kale, stems removed
- 1 medium (150g) Granny Smith green apple, cored and chopped
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) fresh ginger, peeled and grated
- 1 cup (240ml) unsweetened coconut water
- 1 tbsp (12g) chia seeds
- 1 pinch (1g) sea salt
Instructions:
- Wash all produce thoroughly. Core the green apple and chop it into small chunks. Note: Leave the skin on for the nutrients.
- Grate the ginger finely using a microplane or small grater. Note: This prevents chunky bits in the final drink.
- Pour the coconut water into the blender first. Note: This protects the blades and helps the flow.
- Add the chia seeds to the liquid. Note: This lets them start hydrating immediately.
- Stuff in the baby spinach and chopped kale. Note: Pack them down so they don't get stuck at the top.
- Toss in the chopped apple, grated ginger, and lemon juice.
- Start the blender on the lowest setting to break up the apple chunks. Note: This prevents the motor from straining.
- Quickly increase to high speed.
- Blend for 45–60 seconds until the color is a uniform green and the texture is velvety.
- Stir in the pinch of sea salt by hand or pulse for 2 seconds.
