Ingredients:
- 115g unsalted butter, melted and slightly cooled
- 65g brown sugar, packed
- 25g granulated sugar
- 1 large egg yolk
- 2.5ml vanilla extract
- 95g all-purpose flour
- 1.5g baking soda
- 0.75g salt
- 85g semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Note: Giving the oven time to fully stabilize prevents uneven baking.
- In a medium mixing bowl, stir together the melted butter, brown sugar, and granulated sugar. Stir until the texture is glossy and smooth.
- Stir in the egg yolk and vanilla extract. Mix until fully incorporated and the batter looks like a thick syrup.
- Add the flour, baking soda, and salt directly into the wet mixture.
- Gently fold the ingredients together with a spatula. Stop until only a few small streaks of flour remain. Note: This prevents the gluten from toughening.
- Fold in the semi sweet chocolate chips. Ensure they are evenly distributed so every bite has chocolate.
- Scoop approximately 2 tablespoons of dough per cookie. Place them on a parchment lined baking sheet, spacing them 2 inches apart.
- Bake for 9-11 minutes until the edges are deep golden brown but the centers still look slightly soft.
- Remove from the oven and allow them to firm up on the pan for 5 minutes.
