Ingredients:

  • 2 cups (250g) All-purpose flour
  • 3/4 cup (65g) Dutch-process cocoa powder
  • 1 tsp (5g) Baking soda
  • 1/2 tsp (3g) Salt
  • 1/2 cup (115g) Unsalted butter, melted and cooled
  • 1 cup (200g) Brown sugar, packed
  • 2 large Eggs, room temperature
  • 1/4 cup (60g) Greek yogurt, plain
  • 1 tsp (5ml) Vanilla extract
  • 2 cups (225g) Grated zucchini, squeezed gently
  • 1 cup (170g) Semi-sweet chocolate chips
  • 1/2 cup (60g) Chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. Grate the zucchini using the fine holes of a box grater, place in a clean kitchen towel, and squeeze gently to remove excess water.
  3. In a large bowl, sift together the flour, cocoa powder, baking soda, and salt; whisk to remove cocoa lumps.
  4. In a separate bowl, whisk melted butter and brown sugar until smooth. Beat in eggs one at a time, then stir in Greek yogurt and vanilla extract.
  5. Gently fold the dry ingredients into the wet ingredients using a rubber spatula until no streaks of flour remain.
  6. Fold in the semi-sweet chocolate chips and chopped walnuts.
  7. Pour batter into the prepared loaf pan and bake for 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan briefly before transferring to a wire cooling rack.
