- 3/4 cup (65g) Dutch-process cocoa powder
- 1 tsp (5g) Baking soda
- 1/2 tsp (3g) Salt
- 1/2 cup (115g) Unsalted butter, melted and cooled
- 1 cup (200g) Brown sugar, packed
- 2 large Eggs, room temperature
- 1/4 cup (60g) Greek yogurt, plain
- 1 tsp (5ml) Vanilla extract
- 2 cups (225g) Grated zucchini, squeezed gently
- 1 cup (170g) Semi-sweet chocolate chips
- 1/2 cup (60g) Chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.

- In a separate bowl, whisk melted butter and brown sugar until smooth. Beat in eggs one at a time, then stir in Greek yogurt and vanilla extract.
- Gently fold the dry ingredients into the wet ingredients using a rubber spatula until no streaks of flour remain.
- Fold in the semi-sweet chocolate chips and chopped walnuts.
- Pour batter into the prepared loaf pan and bake for 60 minutes or until a toothpick comes out clean.
- Cool in the pan briefly before transferring to a wire cooling rack.
