Ingredients:

  • 1 lb dried black beans, rinsed and sorted
  • 6 cups vegetable broth
  • 2 dried bay leaves
  • 1 tsp salt
  • 1 medium yellow onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 4 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 tbsp brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Rinse the dried beans under cold water, removing any small stones or debris. Place the rinsed beans, broth, bay leaves, and half of the salt into the crockpot.
  2. Stir in the diced onion, green bell pepper, minced garlic, cumin, oregano, and black pepper. Cover and cook on Low for 8 hours or High for 4-5 hours until beans are tender.
  3. Stir in the brown sugar and vinegar. Cook on High for another 30 minutes to allow the sauce to thicken into a glossy, dark glaze.
  4. Remove the bay leaves and garnish with fresh lime juice and chopped cilantro before serving.
