Ingredients:
- 1 lb dried black beans, rinsed and sorted
- 6 cups vegetable broth
- 2 dried bay leaves
- 1 tsp salt
- 1 medium yellow onion, finely diced
- 1 medium green bell pepper, finely diced
- 4 cloves garlic, minced
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1 tbsp brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp fresh lime juice
- 1/4 cup fresh cilantro, chopped
Instructions:
- Rinse the dried beans under cold water, removing any small stones or debris. Place the rinsed beans, broth, bay leaves, and half of the salt into the crockpot.
- Stir in the diced onion, green bell pepper, minced garlic, cumin, oregano, and black pepper. Cover and cook on Low for 8 hours or High for 4-5 hours until beans are tender.
- Stir in the brown sugar and vinegar. Cook on High for another 30 minutes to allow the sauce to thicken into a glossy, dark glaze.
- Remove the bay leaves and garnish with fresh lime juice and chopped cilantro before serving.
