Ingredients:
- 1.5 cups Funfetti cake mix
- 0.5 cup all-purpose flour
- 0.5 cup unsalted butter, softened
- 2 oz full-fat cream cheese, softened
- 0.5 tsp fine sea salt
- 1 tsp pure vanilla extract
- 3 tbsp red and green festive sprinkles
- 12 oz white chocolate melting wafers
- 1 tbsp refined coconut oil
- 1 tbsp extra festive sprinkles for garnish
Instructions:
- Spread the Funfetti cake mix and all-purpose flour onto a baking sheet and bake at 350°F (175°C) for 5 minutes to heat-treat the raw flour. Let it cool completely.
- In a large mixing bowl, cream together the softened butter and cream cheese until smooth and airy.
- Gradually incorporate the cooled cake mix, flour, sea salt, and vanilla extract until a thick dough forms.
- Fold in 3 tablespoons of festive sprinkles into the batter.
- Using a small cookie scoop, portion the dough and roll into 1-inch balls. Place on a parchment-lined tray and freeze for 30 minutes.
- Melt the white chocolate wafers and coconut oil in the microwave in 30-second increments, stirring until smooth.
- Dip the chilled truffles into the white chocolate using a fork, tapping off the excess. Top with garnish sprinkles immediately and refrigerate for 2 hours to set fully.
