Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 cups grated zucchini
- 1/2 cup neutral oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until combined.
- Whisk the oil, sugar, eggs, and vanilla directly into the dry ingredients until a thick paste forms.
- Fold in the grated zucchini using a spatula, stirring just until no streaks of flour remain.
- Gently fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
