Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 2 cups grated zucchini
  • 1/2 cup neutral oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until combined.
  3. Whisk the oil, sugar, eggs, and vanilla directly into the dry ingredients until a thick paste forms.
  4. Fold in the grated zucchini using a spatula, stirring just until no streaks of flour remain.
  5. Gently fold in the semi-sweet chocolate chips.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
