Ingredients:
- 2 cups (300g) pitted black cherries, halved
- 1/4 cup (50g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) heavy whipping cream, chilled
- 1 can (14 oz / 397g) sweetened condensed milk
- 1 tsp (5ml) almond extract
- 1g sea salt
- 1/4 cup (40g) dark chocolate shavings
Instructions:
- Combine the halved black cherries, sugar, and lemon juice in a saucepan over medium heat.
- Simmer for 8–10 minutes, stirring occasionally, until the cherries have released their juices and the liquid has thickened into a syrupy glaze.
- Remove from heat, stir in the vanilla extract, and let the mixture cool completely.
- In a chilled mixing bowl, beat the heavy whipping cream on medium-high speed until stiff peaks form.
- In a separate bowl, whisk together the sweetened condensed milk, almond extract, and salt.
- Gently fold the whipped cream into the condensed milk mixture using a spatula until smooth.
- Pour the base into an ice cream maker and churn according to manufacturer's directions. During the last 2 minutes of churning, pour in the cooled cherry reduction and chocolate shavings.
- Transfer the ice cream to an air-tight freezer container and chill for 6 hours before serving.
