Ingredients:
- 1 cup (225g) unsalted butter, softened to room temperature
- 1 cup (200g) granulated sugar
- 1 large egg (approx. 50g)
- 2 tsp (10ml) vanilla bean paste or extract
- 2 ¼ cups (280g) all-purpose flour
- 2 tsp (6g) cornstarch
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 2 tbsp (25g) coarse sparkling sugar
Instructions:
- Cream the softened butter and granulated sugar on medium-high speed for 3 full minutes until the mixture is pale and fluffy.
- Beat in the egg and vanilla until the mixture looks velvety and cohesive.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
- Turn the mixer to the lowest setting and gradually add the flour mixture, mixing only until white streaks disappear.
- Scoop rounded tablespoons of dough and roll them into balls.
- Roll each ball in coarse sparkling sugar until evenly coated.
- Place dough balls 2 inches apart on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 9–11 minutes, removing them when edges are barely golden and centers still look slightly underbaked.
- Transfer to a wire cooling rack to finish setting.
