Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large egg (approx. 50g)
  • 2 tsp (10ml) vanilla bean paste or extract
  • 2 ¼ cups (280g) all-purpose flour
  • 2 tsp (6g) cornstarch
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 2 tbsp (25g) coarse sparkling sugar

Instructions:

  1. Cream the softened butter and granulated sugar on medium-high speed for 3 full minutes until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla until the mixture looks velvety and cohesive.
  3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  4. Turn the mixer to the lowest setting and gradually add the flour mixture, mixing only until white streaks disappear.
  5. Scoop rounded tablespoons of dough and roll them into balls.
  6. Roll each ball in coarse sparkling sugar until evenly coated.
  7. Place dough balls 2 inches apart on a parchment-lined baking sheet.
  8. Bake at 350°F (175°C) for 9–11 minutes, removing them when edges are barely golden and centers still look slightly underbaked.
  9. Transfer to a wire cooling rack to finish setting.
