Ingredients:
- 10 large eggs
- 1/4 cup whole milk
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 lb ground turkey sausage
- 1 cup diced white onion
- 1 cup diced red bell pepper
- 2 cups shredded sharp cheddar cheese
- 8 large (10-inch) flour tortillas
- 2 tbsp unsalted butter
Instructions:
- Brown the ground sausage in a 12-inch non-stick skillet over medium-high heat until crumbled and browned.
- Add the diced white onion and red bell pepper to the skillet; sauté until onions are translucent and peppers have softened.
- In a separate mixing bowl, whisk together the eggs, milk, salt, and black pepper.
- Pour the egg mixture into the skillet with the meat and vegetables, stirring gently over medium heat until soft-curds form and eggs are just set.
- Remove the skillet from heat and allow the filling to cool to room temperature to prevent the tortillas from becoming soggy.
- Lay out the flour tortillas and divide the cooled egg and meat mixture and shredded cheddar cheese evenly among them.
- Fold in the sides and roll the tortillas tightly to create burritos.
- Melt butter in a pan and sear the burritos seam-side down until golden brown and sealed.
- Wrap each burrito individually in heavy-duty aluminum foil and store in gallon-sized freezer bags.
