Ingredients:

  • 10 large eggs
  • 1/4 cup whole milk
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 lb ground turkey sausage
  • 1 cup diced white onion
  • 1 cup diced red bell pepper
  • 2 cups shredded sharp cheddar cheese
  • 8 large (10-inch) flour tortillas
  • 2 tbsp unsalted butter

Instructions:

  1. Brown the ground sausage in a 12-inch non-stick skillet over medium-high heat until crumbled and browned.
  2. Add the diced white onion and red bell pepper to the skillet; sauté until onions are translucent and peppers have softened.
  3. In a separate mixing bowl, whisk together the eggs, milk, salt, and black pepper.
  4. Pour the egg mixture into the skillet with the meat and vegetables, stirring gently over medium heat until soft-curds form and eggs are just set.
  5. Remove the skillet from heat and allow the filling to cool to room temperature to prevent the tortillas from becoming soggy.
  6. Lay out the flour tortillas and divide the cooled egg and meat mixture and shredded cheddar cheese evenly among them.
  7. Fold in the sides and roll the tortillas tightly to create burritos.
  8. Melt butter in a pan and sear the burritos seam-side down until golden brown and sealed.
  9. Wrap each burrito individually in heavy-duty aluminum foil and store in gallon-sized freezer bags.
